Recipe for the Coconut Pumpkin Curry:
1 small winter squash
Olive oil
One bunch chard
Onion
Garlic
Ginger
1 can Coconut milk
Cinnamon
Curry powder
Cayenne
Coriander
Cumin
Turmeric
Lemon juice
Salt
Veggie broth
Maple syrup
Soy sauce
Sauté onions with ginger and garlic. Add spices. Stir. Add squash. Stir 5 minutes. Add can of coconut milk, vegetable broth, and soy sauce. Let simmer for 20 minutes or so. Add chard and serve over rice! Add lemon juice if desired. I don't use exact measurements for this recipe, so feel free to adjust.
