I can't believe you just poured out the rest of the caramel like that! When I was little my grandma used to pour in some water to dissolve it and give it to me as "caramel tea" and it's so delicious. If you use milk instead to clean the pan, you have caramel milk. Also very delicious.

Sorry my friend, but your recipe is not correct,. I made this 100 times, It It's very important to put the cream on cold water and heat it up to 150 degrees but not boiling for 2 hours

I'm glad your method works for you BUT the reason your method takes 2 hours instead of 1/2 hour is because your cold water cools the hot egg mixture down and then has to heat every thing back up again in the oven. I don't know where you're from but we don't like running the oven anymore than we must. Sending lots of love 💖 from sunny 🌞 Arizona 🏜️. Take care of yourself and each other. P.s. in all my years as a student of cooking, I've never heard of anyone starting a custardy desert with cold water.
