I'm glad you used Plochman's. It is tangier and better and it's OUR mustard. :D Warmed my heart right up. Doesn't have to be dyed green relish--it can be any pickle relish. Also, not every place uses tomatoes. I personally don't want tomato on my dogs. Usually just pluck 'em off and eat 'em before I eat the hotdog. If you wanna make a Chicago dog even better, do it Gene and Jude's style and make a double dog. Two dogs on one bun.

I come from a veteran Chicago family. My dad’s whole side had their own hot dog cart and we were trained to make Chicago dogs from them. Despite the tradition, I have to say the pickled onions looks like a phenomenal idea and I like how it further elevates the color profile

I lived in the Chicago area for 49 years out of 55. I lived in areas around Manteno, IL (where Plochman's is made) all of those 49 years. My in-laws lived in Manteno. I moved to Colorado in 2017 to be near my daughter and grandkids and I know what you meant when you said you have to order that stuff online. That's exactly what I did for the Chicago Dog video I did on my channel. There are a lot of Chicago foods I miss, Portillo's being one of them. I've never seen pickled red onions on a Chicago dog before but why not. I'm open to trying that. Anyway, you did the Chicago dog justice and I should know have lived in that area most of my life. We do have some food places out here that make Chicago type food, hot dogs, beef sandwiches etc and we also have one place, Chicago Mikes restaurant in Englewood just to the South of Denver that will sell you the Vienna relish and sport peppers but for the poppy seed buns you are on your own. I ordered the S Rosen's buns online just so I could show an authentic Chicago dog on my video. These hot dogs are my favorite and don't forget the celery salt next time...that is a must ☝restaurant that will sell you the Vienna relish and sport peppers but for the poppy seed buns you are on your own. If you ever go to Portillo's or a Chicago hotdog place that has chilli, definitely dip your hotdog in the chilli. You wont regret it.

I love the thousand ways to make a good dog. It is definitely a regional thing when it comes to toppings. Even the dog recipe in the meat varies. If you go to Russia it is mostly flour.

I do enjoy a good Chicago dog every now and then, but I have never craved them like my husband. I have to make them for him and I am not allowed to put ketchup on it. He does, however let me put sauerkraut on it. But, that's only because his mother is German. I'm also allowed to use dill relish on mine instead of his neon green sweet relish. As you can guess, my husband loves Chicago dogs. 😂

@@TeachaMantoFish I spent the summer in Virginia a couple of years ago, and I had no idea that it was so hard to find ingredients for them elsewhere until I went shopping. My husband was the electrical GF at the Amazon going in there, and a lot of the electricians brought their wives and they were from all over the country. While the men were at work, us wives would cook together and make things from back home. I decided I would make Chicago dogs on the grill for everyone. Well, I'm sure you know how that went 😂 It was a lot of fun. Beautiful state you have!! I miss Wegmans!!! It's the only place I have been able to find clotted cream and Happy Rice. 😁

Bonus points for Plochmans. Absolutely no ketchup, totally ruins it. Dont want ketchup in the same zip code as my dogs. Boiled or steamed, never grilled. Some joints do char dogs, but it is not the true traditional way. Forgot celery salt, and no to pickled onions. Thats me. I get doing it your own way, how you like it, but it ceases to be a Chicago dog at that point. I grew up on the NW side, 3rd generation of my family in Chicago and have lived in the area all my life and have an almost sacred level of respect for our local foods.

I've lived here 55+ years and have consumed more dogs than I'll admit. I'm fine with your twist, but you didn't really deviate much from the "typical Chicago dog". I'm not saying there's anything wrong with that, I think the standard Chicago dog is really pretty good. However, truth be told, most people here do what you've done, they put their own twist on the dish. If I may make a few suggestions. 1. Never use ketchup! It's just wrong. Basic yellow mustard only. 2. The mustard must be applied to the inside of the bun first. Doing it your way (on top) that stuff will get all over your face and no one will tell you you look like the lemon version of an oompa loompa. 3. As you've done, get creative with the onions. Raw is typical, but I like to caramelize mine. Just cook them down until they're brown and gooey. Incredible! Plus, if you do it right, you'll put an entire onion on your dog. 4. You must finish with the celery salt. 5. Grilled is 10x what a boiled/steamed dog is. 5. Next time you're in Chi, get over to Wieners Circle (not far from Wrigley) and grab a char cheddar dog. You might have a hard time getting through 2 of those. Just don't order the Chocolate shake. :)
