To measure the honey: Press the back of your spoon into the whipped cream. Then fill the depression you made with honey. No wasted honey stuck to the spoon! This is especially useful with larger measures of sticky substances.

This was one of the first things I learned to make when I moved to Scotland from the US. Scotch breath was the first. My neighbour taught me a few Scottish recipes, Clootie Dumplings was another desert, along with Dundee cake and my hubby’s all time favourite, sticky toffee pudding. And in exchange for teaching me Traditional Scottish recipes, I began teaching her some New England recipes. It was so much fun sharing. The first bbq I was invited to over here, I said I would bring my homemade baked beans. I got funny looks and asked why on Earth I would make homemade baked beans when you could buy them cheaply in a can. Lol my Scottish hubby laughed and said you will see why tomorrow. That was 28 years ago…and every get together, I am always asked to bring my Boston baked beans lol. No matter how many times I share the recipe and tell them how easy it is, it is still requested. It blew their mind when I added cheddar cheese to my apple pie crust lol. When I brought American Strawberry shortcakes everyone was asking for the recipe. Perthshire in Scotland produces the worlds best raspberries and strawberries. When my American family come over, Cranachan is the dessert most often requested, no matter what time f year. I have played around as I am not keen on Scottish whiskey…well whiskey from anywhere really. But I have played around as the recipe is so adaptable and forgiving and I really enjoy it with a bramble whiskey liquor or a Heather whiskey liquor. I am so looking forward to summer and having some lovely cranachan!

If you like sticky toffee pudding you need to try a treacle pudding. For me its the better of the two

Hi from MA! What would you substitute for double cream? I was thinking a mild Greek yogurt maybe?

@@skokokelli You need the cream, perhaps a mix will do but you need the cream. So called "heavy cream" is the same

Tip: use Jordan's honey crunch cereal for a quick no toast version. Also frozen raspberries work well and Drambuie or Glava liqueur instead of whisky.

Good tips. It's a very adaptable recipe where everything can be substituted with something else and still be delicious.

Always watch out for the cat. We have exactly the same here, hungry, looking innocent and the stealing the best parts of the menu.

In a pinch I take raspberries with a little scotch mashed together and crumble a home made oat cake in a bowl with a dollop of whipped cream.....mix thoroughly and voila! It's a quick version, but its healthy and incredibly yummy...Cheers!

I saw the reflection of the cat on the glass door and thought: "Cat'll be after the cream!" And I wasn't disappointed! I am going to try this recipe. Thanks for sharing it.

I think traditionally it used crowdie- some kind of cream cheese. I’ve made it with crème fraîche and double cream with that in mind. Mix in whisky into cream & sometime raspberry jam if I’m in the mood. Layer in glass with raspberry & honey granola, raspberries & raspberry couli if I’m going crazy. Firming up in the fridge is a good plan!

Growing up we would go to the Gaelic Club held in the Canadian-American club in Massachusetts. At the end of the night, they often had a tea and serve something very similar. It was homemade whipped cream and oats mixed together. I don't know if they toasted them or not. It was my favorite. I'm going to try this way of making it. Your video brought back many fond memories of the music and fellowship I associate with this dish.

*THAT SOUNDS DELICIOUS!* We don't have any raspberries right now, not even frozen ones, but I'm thinking the frozen wild blueberries in the freezer will work just fine - and I won't even need to strain seeds out of those! Thanks for sharing!

I grow my own berries and can them. Some whole, some pureed and some preserves. The leftover from the puree; I dehydrate .Tastes wonderful sprinkled over cereal or in a salad.

Since everyone is describing their versions, mine is Greek yogurt, blueberries, maple syrup and sherry. Only the toasted oats mere true to the original.

I'm by the Tamar in Devon, a stone's throw from Cornwall, nearest shops are in Cornwall, postbox down the road is in Cornwall. I like local CLOTTED CREAM! Not for everything though, you'd need double cream! Clotted is Especially delicious with a warm Xmas mince pie, or on a scone! It's rich & flavoursome! Good wishes !

.. suppose for the more health conscious, you could use plain (or vanilla flavoured yogurt) for the main body of the dessert & just top with whiskey infused whipped cream.. just a thought.

Cranachan is also very big in Ireland. I was taught to make it by an Irish executive chef from Dublin.

Clifford I’ve never heard of it and I’ve lived in 5 different counties in Leinster, including Dublin, in Ireland and my dad is from Donegal and my mum is from Cork!

@@fmcm7715 September 1996, at Ballsbridge Jury's Hotel and Towers, Group Executive Chef, Peter Brady gave us a demonstration in the making of Cranachan, as it was to be included as one of the luncheon menu's for a visiting contingent of chefs participating in the World Cooks' Tour for Hunger. I remember it well as I was to repeat the menu with my team at all the Jury's Hotels in Eire and Northern Ireland, but not the one in Glasgow, where we did not do any of the desserts.There I remember taking Irish beef across with us, because of the mad cow disease in the UK. We were also to use Bushmills' in the making as they were one of our sponsors.

I think most liquors or liquers will work for this? The level of acidity of the berries determines how they interplay.

The simplicity of this reminds me a lot of Latvian desserts, except they tend to use dark rye bread rather than oats. :-) I had one like it during a visit in the country and it was delicious, so this looks very tempting!

These are the weird little parfaits that they sell in fancy grocery stores. It's the whiskey though that makes it undoubtedly Scottish.

What type of oats do you use? Steel-Cut?

I assume they'd be called rolled oats if you're in North America. Steel cut wouldn't absorb enough cream in time and would likely still be hard/dense. Don't use quick cook or minute oats for the exact opposite reason. It would likely turn the cream into a paste if they didn't burn first.

@@gregislate That's good. I know all about whisky, but there is too much alcohol for the taste, and is is never allowed to age properly. Calvados and Armagnac age correctly, and are so much more balanced.
