Hi! Personally I prefer the one with raspberries better. This one reminds me more of a thick whole cranberry sauce. It has a lot of texture. However, the cranberry flavor really comes through so if you are a cranberry lover you might like this one 😊

Looks awesome! I am definitely making this. I have pressure canned, but never steam canned. Why only a quarter inch headspace for steam canning?

Headspace doesn’t have anything to do with pressure canning vs steam canning. A quarter inch headspace is what is required to jams and jellies 😊

How sweet does this jam turn out? If sugar is reduced, do you think it would still set without pectin? Could add Ball low sugar or Pomomo's.

It’s a no! First of all, the jar manufacturers state the jars are not designed for that purpose. Baking is dry heat, canning involves water. Secondly most of the ingredients in baked goods are not safe for canning extension.unh.edu/blog/2021/11/cakes-breads-baked-canning-jars-not-safe
