Processing time for chicken stock is 25 minutes for quarts so 40 minutes is the guideline here

That is a good question and I’m not sure. Cider has a different consistency than apple juice so I’m not sure it would reduce the same …

I bought the five tray Excalibur in 2020 but then I bought a freeze dryer in 2022. Figured I wouldn’t need my dehydrator anymore so I sold it. After having dehydrator withdrawal I bought a small 4 tray Excalibur a few months ago! Haha!

I am interested in hearing if you like the results using onion flakes better than fresh onions? I have also noticed that some canning recipes use dehydrated herbs rather than fresh herbs. In the past, I have been unhappy with the results of my canned soups because the flavors can get too strong and have an off flavor, to me. I was thinking about using dehydrated garlic and onions, because of that.

Finally! No ranch seasoning, not my favorite. I'll be using cheese nips type crackers instead. Also mixing all the dry seasonings into the oil makes it a lot easier to mix in and coat all the crackers, then mix in the cheese.

Have you ever tried canning jams and jellies with Pomona’s Pectin? You need far less sugar allowing the flavor of the fruit to really come through. I discovered it this past year and it’s awesome!

Another wonderful video. I will definitely be making this one. Many poms available now in San Diego, CA. However I do have a question? I was given some of the lovely pear shaped persimmons everyone is getting now and I cannot find a water bath recipe anywhere safely giving a recipe to make a small batch. Any suggestions are greatly appreciated as I don't know what to do with these persimmons :/ other than just eat them as they are lovely and soft now.

I’m at a 6000 ft elevation. I usually add an extra couple minutes to my full rolling boil time in order to get a proper gel. Are there any official guidelines for higher altitudes? Excited to try this recipe! 😊

Thank you. I wasn’t referring to the processing time. I was referring to the amount of time we need to keep the mixture in a hard boil after the sugar has been added. The standard is 1 minute. At 6000 ft our boiling point is 201°F. I usually add time because it is usually not setting properly after only 1 minute. Is there guidance on how much extra time we need to keep it at the hard boil at higher altitudes? @@carol-thriftychichousewife6231

If you cut your potatoes up ready to can, then soak them for a half to 2 plus hours. Rinsing several times until the soaking liquid is clear. When I can russet potatoes the liquid is perfectly clear or near clear. I do not blanch the potatoes either. PS Your mashed potatoes and gravy look fabulous.

Made this today, my store didn't have Pom brand juice, so I used another brand that was all juice, but not as clear. My jelly came out only so-so. Will try again later with the brand you used.

Hi Carol, I wanted to let you know that I made this recipe about a week or so ago and it’s delicious!😋 This year I’ve been truly blessed with my garden at the lateness of the year. I still have plenty of eggplant and green beans etc.. on the vine but I’m falling short on the tomatoes. I still have some on the vines but don’t think they will ripen before the first frost. So my question is can I use 48oz store bought fire roasted tomatoes? I’m always concerned about altering a canning recipe. Thanks 💗

The middle of the lid should not flex up and down when touched. It should stay down. You also should be about to lift the jar by the lid

Headspace doesn’t have anything to do with pressure canning vs steam canning. A quarter inch headspace is what is required to jams and jellies 😊

It’s a no! First of all, the jar manufacturers state the jars are not designed for that purpose. Baking is dry heat, canning involves water. Secondly most of the ingredients in baked goods are not safe for canning extension.unh.edu/blog/2021/11/cakes-breads-baked-canning-jars-not-safe

I can tell by reading the recipe this will be delicious! This evening I will make the sauce and refrigerate it ( minus the bourbon, will add in the morning) and do an overnight soak on the beans. Jars are ready to go. Rosered (Pam) said on her Chanel that she washes and dries the jars and stores them with the lids on so no washing needed on canning day! Tomorrow I will can these up quickly and get on with my day! THANKS SOOOO MUCH for this recipe! MANY of your recipes are in my pantry 😊
