All bosses karts are unique. Ripper roos is best at acceleration imo.

They just have an unique colour. You can hear by the sound what kind of kart it is. Pinstripe has the same cart as Polar and Pura i believe.

Yes, contrary to the stats shown in-game (character selection in Adventure Mode), the acceleration class is faster than the balanced class. When you do a lot of power sliding and have enough reserves the maximum speed you get is comparable to the speed class, but it gives you better handling as well.
