Haven't finished watching yet (I will though)... I just couldn't wait any longer to say that I'm SOOOoo happy to see somebody on the road cooking in cast iron. I love my cast iron; use it all the time. Was happy to hear you say what you did about tomatoes (acidic ingredients) in cast iron. I've never wavered from cooking chili (which of course includes tomatoes) in my iron; am just mindful to do a little extra re-seasoning after. I've had some people balk at the "cleanup process" for cast iron; it's HILARIOUS to watch their reactions when you say "NO soap! Ever." (Which isn't entirely true; I've used it on occasion but again, just like acidic ingredients, only when I know I'm going to be doing some serious re-seasoning after. I rarely use soap. Very, very rarely. Just hot hot water and the fire, then some oil to reseason.) Friends have been impressed when I made pineapple upside down cake in the iron - but honestly, it's so easy. Many people just don't realize how versatile cast iron is and how well it cooks when it's cared for properly (which is the key). I use my iron skillets for eggs ALL of the time. Great video you two... I know I'm doing a rewind in that this vid is from a couple of years ago but still, LOVE your channel. Safe travels, y'all!

In the voice of Forest Gump " chili, chili dogs, chili mac, chili taters... Ect." Lol had too. My dad was a big chili guy. He used to make with is chili burritos (chili, rice and cheese), and we even used to do chili spaghetti. Those are both great. Should try them. Ive been looking for a decent chili recipe. Your's seems very similar to my dad's (RIP dad) chili. I may have to give it a go. Im just getting into cast iron cooking too.

Thanks Susan! If you are using can beans, we would add them in about the last 10 minutes so they warm up and have a little time to work in to the flavor a bit, but don't turn mushy.

Hi Nicholas! Sometimes we go simple and just use Velveeta, milk & butter. It’s not the healthiest route, but it tastes good and it’s easy. We’ve also experimented with using milk, butter, cream cheese or a Mexican melting cheese & a variety of shredded cheeses. Our mac & cheese is different every time we make it because we’re always experimenting to try to make it a little healthier.

Great video and the chilli looks incredible! One wee question, my D.O hangs off level like yours. But mine has a side lip and I thought this was the reason it's hangs like that. I guess cause of stove based cooking, I try and get it to sit level, but it's an impossible task. Is it just something you have to accept when it's hanging?

Glad you enjoyed the video! Thanks for the comment. We try to get ours as level as possible by adjusting the tripod legs and sliding the hook along the dutch oven handle. Depending on the cooking area, sometimes this is more challenging than other times. As long as it’s level enough to safely cook and not have the oven fall over or spill, we don’t worry about it being perfectly level.

That campground I am finding hard to understand why anyone would have stayed there. You have an apartment on wheels and looks like you have the means to get to something that is prime. I don't know if that is florida or texas but if you see me walking around that place shoot me dead. I am in the mood to cook chili in my dutch oven so I clicked on this. The national forest campgrounds up north spoiled me.
