An easy asparagus soup finished with cream. Velvety soft in taste and can be served warm or iced.
INGREDIENTS (8 people) :
* 20 grams of butter
* 1 kg asparagus fresh
* 1/2 stem leek
* 1 onion large (or 2 small)
* 2 cloves of garlic
* 20 grams of flour

* 500 ml cooking liquid from the asparagus peels
* 25 cl culinary cream
* some pepper from the mill

As Finish (optional) :
* 500 gr asparagus fresh
* some smoked salmon
* some chives chopped
INFO AND TIPS :
* This soup stands or falls by 2 things. The quality of your chicken stock and the way you peel the asparagus! Provide fresh asparagus and properly remove their bottom part. Also carefully peel them so that every fiber is from the asparagus. Why? It is the fibers and the lower part of the stem that can make your asparagus cream soup taste bitter.
* Also make sure when cooking the peels and asparagus (to make a stock) that you bring them to a boil and then remove from the heat. Never let peels cook for a long time! Bring them to a boil and let them steep in the boiling water for a while. The asparagus that you may want to cook with you can continue to cook in this way until they are al dente, then remove them from the cooking liquid and let them drain on a cloth.
* You prefer to use a chicken stock that you have made yourself. But you can also make the soup with a vegetable stock or white stock.
