Creamy Tomato and White Bean Soup
Total time: approximately 30 minutes Makes 4-6 servings
Ingredients
2 tbsp (30 mL) olive oil
4 garlic cloves chopped
1 medium onion, minced
1/4 tsp dried thyme leaves
1-2 cup (796 mL) Pumpkin
1 cup (250 mL) White Kidney beans
½ tsp (2.5 mL) salt
Freshly ground pepper to taste
1 cup (250 mL) Coconut Milk
