Growing your own herbs is a fantastic way to ensure that you always have fresh herbs on hand and save money in the supermarket. Whether you begin from seed or purchase pre-grown plants, you can harvest what you need whenever you need it. In this video, I will use a small wooden palette collar to create a raised bed for planting herbs and building a miniature kitchen garden in my cottage garden.

Here is more information on the plants I used:
Rosemary
Thyme
Both rosemary and thyme love well-drained soil and can tolerate some drought. Mix in some horticultural grit to the soil when planting. Both herbs can add flavour to roasted meats and vegetables to soups and stews.
Parsely
Parsley is a biennial herb ( annual in Ireland ); it doesn't tolerate frost, so best to move it into a porch or sheltered area during the Winter months. They are commonly used as a garnish or flavour enhancer in cooking.
Sage
Commonly used in cooking and paired with chicken, pork or fish and soups. Sage has also been found to have antioxidant and anti-inflammatory properties, making it a popular ingredient in natural remedies and health supplements.
Rocket salad
Rocket is an annual plant with one growing season, easy to grow from seed and takes around 40 - 50 days to grow from seed to harvest.
Chives
A member of the onion family, they grow back each year and have a lovely purple flower that the bees love. Mild onion-like taste and is often used to garnish soups and salads.
Apple mint
It can be invasive, so best to grow it in a container or pot. It makes a lovely tea or is great with a cocktail and is known to aid digestion.
Scented mint geranium ( Pelargonium Lady Diana): Nice alternative to mint as less invasive. The leaves can be used t make tea or in a mojito, and the flowers are also edible.
Immortelle ( also known as curry plant)
It is often used in skincare products for its anti-ageing properties and essential oils. The leaves can be used to add flavour to soups and curries and even used to make tea.
What is a palette collar?
A palette collar is a wooden frame that can be stacked and has hinges in all four corners. It is commonly placed on top of a pallet, creating a box that can be used for shipping items.
You can stack them on top of each other to create tall, multi-level containers, usually made from either wood or plastic.
These are popular in gardens because they are great for creating a raised bed on a budget.
