Some people use a Restickable Glue Stick to make post-it notes. Not sure how long it lasts for though.

What type of paper do you use ?

Regular copy paper. I believe 20 lb was used for the video. 24 lb is my favorite to use

You can use double sided tape, they have a removable version at Michael's or online.
