It's an XML file. If you export a current map from Dorico you can open it in a text editor and see what it contains.

Really it's just a convention - you can read more about MIDI at midi.org. Many sound library vendors have tended to use CC1 for 'dynamics' (it's often referred to as 'dynamics' in sound libraries-especially orchestral libraries-as the timbre of the sound is also varied; straight 'volume' is generally at CC7, and many libraries also use CC11as 'expression' in conjunction with dynamics). Generally, modulation wheels on synths default to controlling CC1, so it's handy to use as a hardware controller for dynamics. Hope that helps! Thanks for watching, Anthony
