Salisbury Steak
1/2 Yellow Onion grated
1/2c Panko Bread Crumbs (less if using regular bread crumbs)
1 Garlic Clove minced
1 Egg
2tsp Dry Mustard or 3tsp Dijon Mustard
1tsp Bullion Paste or 1 Bullion Cube crumbled
2tbsp Ketchup
1/2tsp Worcestershire Sauce
1lb Lean Ground Beef
Olive Oil for frying
Mushroom Gravy:
1/2 Yellow Onion chipped
2 Garlic Cloves minced
5 - 6 Mushrooms sliced
2tbsp Butter
2tbsp Flour
2c Beef Stock
1/2c Water
2tsp Dijon Mustard (I do not use the dry mustard in the gravy)
2tsp Worcestershire Sauce
Salt to taste
Mix the grated onion and bread crumbs and set aside for 20minutes
Add the rest of the ingredients (except the oil) and mix thoroughly
Form into 4 - 5 patties about
Heat a cast iron pan on medium high
Drizzle in a bit of olive oil and spread it with some paper towel so it coats the pan
Sear each side of the patties and remove them to a plate
For the gravy:
If the pan is dry add a bit more oil
Reduce the heat to medium low
Add the chopped onion, garlic and mushrooms to the pan and saute until the mushrooms start to release their liquid and take on colour
Push the mushrooms aside and add the butter and let it melt
Add the flour and stir everything together to coat the mushrooms
Allow a few minutes for the flour to cook - stir occasionally
Add the stock slowly while stirring and add the water
Add the mustard and Worcestershire and mix well
Taste for seasoning
Bring to a simmer and add the patties back in and bring to a simmer
Reduce the heat and let the patties reheat
Once they are warmed through remove them from the pan to a warm plate
If needed increase the heat
Let the gravy simmer until thickened
Serve with mashed potatoes and peas or green beans
