would be cool if there was a more programmatic oriented version of you, that showed us how to code this using the canvas painting methods using something like p5.js or general programming concept of it. When you can get it into code, you could do some really cool stuff.

For the simple first example, you can do that overlaying multiple radial gradients in css. For the later more complex meshes, you can still do it, but then it is super hard and not worthy anymore instead of simple using a static image for it

Yep, you'd have to overlay SVG shapes with gradients that are placed in the right locations

I work with pretty strict design systems so I'd need to the colours of this to be generated from CSS programmatically. But if we export a static image in grayscale, and apply a blend mode (and maybe opacity) on top of some css radial gradients we can get the best of both worlds! Could even consider a prefers-reduced-data query to not deliver the image in that situation for some extra enhancement

You don't. You right click on the mesh gradient after importing, and you copy as PNG. You could then probably resave it as a JPG for better file quality. But to achieve this with straight up CSS, you can't. You could hack it / fake it, but it would take a lot of work.
