I make something like this for my kids but I call it a quesadilla. But the way you dressed them at the end makes me want to make some for myself now.

Made this recipe for Cinco De Mayo. Only change was to leave out the jalapeños to reduce the heat for my lady. They are simple yet fantastic. The flavor with the Sedona Sand seasoning and the crispy shell make them great. Added pickled jalapeños as a topping for me. A couple of Margaritas made it a complete meal.
