Crispy eggplant fingers recipe, fried eggplant recipe, bringal fry, snacks recipe #INGREDIENTS:
1 eggplant / bringal / begun
1 egg
½ tsp red chili flakes
½ tsp Italian sizzling / mixed herbs
½ tsp salt
1 cup rice flour
1 cup bread crumb (Here I use red and white crumb both, for best colour)
Oil for deep fry
Crispy eggplant fingers recipe, fried eggplant recipe, bringal fry, snacks recipe #PROCEDURE:
Cut eggplant in long finger size like video. Then wash this.
Now add chili flakes, salt and mixed herbs with egg. Whisk all properly.
Then add pinch of salt with rice flour and mix.
Now we coat eggplant double time. Because for double coating fried eggplant will be more crispy. So firstly, wet eggplants in eggs, the coat with rice flour, then again brush with eggs and now coat with bread crumbs properly. In same process, coat all eggplant fingers.
In a pan, heat oil properly. Add all coated eggplant very carefully. Fry all in high-medium flame. Stir all and roast until golden brown colour.
Then drain oil with a sieve and transfer fried eggplant in a dish. Remove extra oil with kitchen tissue.
Now enjoy this crispy, crunchy fried eggplant in tea time or evening time.

I have made these3 days in a row they Are so good! Cut, soaked in salt water Rolled in cornmeal double times fried delicious!!! (Forgot all about the eggs & I didn’t gave breadcrumbs). Thanks for an awesome. Dish!! Will try rolling in almond flour to cut down on carbs & make keto friendly.

Nian's Cooking Diary Had my Daughter & her husband try them & they loved them! In frying pan turned burner on 8 Let oil get sizzling hot, put the fingers in set timer 2 min. Turned over them over, set timer 2min again. Done! Perfection. I have made these so many times that i have perfected it!😀
