Crispy Masala Fish:
Ingredients
Fish (sliced) ½ kg
Garlic 8 cloves
Green chilies 2
Lemon juice ¼ cup
Chopped coriander leaves ¼ cup
Curry leaves 4-6
Chili powder 1 tsp heaped
Coriander powder 1 tsp
Cumin roasted & crushed ½ tsp
All spice powder ½ tsp
Tandoori masala 1tsp
Orange color a pinch
Salt 1 tsp
Corn flour 1 tbsp
Gram flour 1 tbsp
Semolina 2 tbsp
Oil for deep frying
METHOD
Grind together garlic, chopped coriander, green chilies, curry leaves, lemon juice, chili powder, coriander powder, cumin powder and allspice, tandoori masala, color and salt, grind to a fine paste and apply on fish, marinate for at least 30 mins. In a plate mix corn flour, gram flour, semolina, pinch of salt, little chopped coriander, mix well keep aside. Now roll fish pieces nicely in the prepared flour, deep fry in fry pan till golden, serve with green chutney.
Jhinga Biryani:
Ingredients
Prawns cleaned 750gm
Chili powder 1 ½ tsp
Salt 1 ½ tsp
Lemon juice 2 tbsp
Fish masala 3 tbsp
Onions 2 chopped
Tomatoes 2 chopped
Green chilies 8 small
Yogurt ½ cup
Curry leaves 15
Potatoes (cubed, boiled) 2
Mint leaves handful
Ginger garlic 1 tbsp
Green chilies 4 grinded
Turmeric ¼ tsp
Cumin 1 ½ tsp roasted and grinded
Cinnamon 1 stick
Green cardamom 2
Black pepper 4
Cloves 4
Bay leaf 1
Black cardamom 1
Star anise 1
Ground onion ½ cup
Coriander leaves 4 tbsp
Sela rice soaked for ½ kg
Lemon slices 2-3
Tomato (sliced) 1
Orange color a pinch
Oil / clarified butter as required
METHOD
Heat oil, add whole spices and chopped onion, fry till light golden, add ginger garlic paste, green chili paste, tomatoes, whole green chili, fish masala, salt, chili powder, turmeric, cumin powder, fry well, add prawns, cook for 5 mins, add in boiled potatoes, yogurt, mint, green chilies, Coriander leaves, 1 tomato cut in slices, 1 lemon cut in slices, top with boiled rice, put orange color in one half portion, clarified butter, brown onion, cover and put it on dum for 15 mins, mix and serve with raita.
Mint Lemon Frappe:
Ingredients:
Lemon juice ½ cup
Mint 1 bunch
White soft drink 300 ml bottle
Sugar syrup as required
Chilled water as required
Crushed ice 1 ½ - 2 cups
Method:
Blend all together, serve chilled.
