@Harry, as always a great video on bush cooking :) thanks for the great idea for the potato bubbles. We made some tonight, but added a bit of a twist... We added diced jalapeno's and grated cheese and was freaking awesome.

Hard for potatoes to be star of the meal next to marron but I can see where your coming from. To all those that said "gnocchi", the flour to potato ratio is a lot different plus the corn flour (starch) will add another dimension

How good are the South West Sours! Though they've changed the lid, the use to have a fully removable top so you could guzzle them :D

I think colonial have had the conventional lid for about three years now. I remember having a sesh on the pales at work chrissy do and yep they pour straight down the back of the throat, Bit like drinking schooners

I think a lot of people do not realise ""shallow fry"" means half submerged in oil PS maybe should have seasoned the spuds before you fried them, no salt or pepper when you mashed them ?

Another fantastic recipe for the camp-chef (Moi), I just find it hard to believe that I need to re-watch this episode (NEVER a bad thing, there is usually something I miss) just to write the recipe down! Those Marron look like melt-in-the-mouth protein goodness, and I've seen several different versions of the potato (usually by wanky, up themselves chefs), but never on a campfire! This one will be test-driven in 2 weeks' time when we all head off for a long weekend 4wd cum 21st birthday celebration for our eldest granddaughter. Stay well, Harry, catch ya in the next one!

Ok this was so good but I’m terrified of heating up oil. The first and last the only time I ever did it it set on fire and I nearly set our house on fire maybe I need the thermometer thing you have. I didn’t know I could get one of these. I’d probably still never heat oil again though to be honest.

Crisp- it’s nearly impossible to make proper evenly crispy spuds with skin- it has too much moisture
