Crispy & Savory Serundeng (Spiced Sautéed Grated Coconut Meat)
Ingredients
The Main Ingredient
1 medium old coconut, weighing about 400 grams, remove the brown part of the coconut skin, grated;
2 tbsp Coriander Powder;
½ tsp Turmeric Powder;
3 Sheets of Orange Leaves;
3 Sheets of Bay Leaves;
50 grams Brown Sugar, grated;
1 tbsp Tamarind, dissolve with 100 ml of hot water, remove the seeds and take the water;
1 tsp Broth powder;
½ tsp Salt, to taste;
½ tsp Cumin Powder, optional
¼ tsp Nutmeg Powder, optional.
Ingredient for the Mashed Spices
6 cloves of Shallot;
6 cloves of Garlic;
6 to 10 curly red chilies, for spicier taste, you can add cayenne pepper much as you want;
2 segments of Ginger;
If you like, you can add 2 cm Aromatic Ginger (Cutcherry), optional.
