I guess the key is consistency. I learned bottom left to top right then bottom right to top left. The thread was folded in half never knotted ,then caught when completing the the first half of the first stitch. This only works when using even numbers of thread. The same principle was used to start the thread as to end it ,when using odd numbers of thread, just as you showed by tunneling under/sewing over the threads.

I was taught the number one rule in vs is thou shalt not knot and to work left to right bottom to top.
