Glad you emphasized that this is YOUR personal version of the Mexican recipe. Every KZbin cook should say this at the beginning, because people are so nasty about what they assume is “authentic or not authentic recipes”. What REAL cooks know is you make your recipe according to your taste and preference. Recipes are flexible and no one recipe is “authentic “, every traditional cook at some point has revamped a “family recipe “ through generations or copied from someone else. I hate seeing people arguing over recipes on comment boards, it’s really childish and ignorant! Food is a universal way for people from all ethnicities, races and nationalities to bond and enjoy. I used to get chicken fajita nachos at the mexican place in my old town. Ive warched a few different recipes but this one looks the closest to it. I loved the seasoning in the queso and how some chips were both crispy and soggy. Ill update how it goes. May try it with some brisket after i try it with chicken.

I have made these twice. They’re always a hit! The second time I made them, I kept them in a crock pot minus the chips. It let everyone add as much or little they wanted for the own plate. It will be a new staple for parties.

I bought these like hard corn tortillas disc(s) that were in the are as taco shells, wraps, etc. in the grocery store. They were way better than like Tostitos chips in a bag. Close to restaurant quality to be honest.
