Full ingredient list:
1.5 lb sliced chicken breast
¼-½ c water
8 oz velveeta cheese
12 oz evaporated carnation milk
2 tbsp tomato paste
1 tsp garlic powder
1 tsp chili powder
1 tsp black pepper
1 tsp onion powder
1 tsp salt (optional)
1-2 tsp olive oil
Fresh tortilla chips
For guacamole:
3 Medium sized avocados
½ small red onion diced
2 roma tomatoes gutted and diced
1 whole lime
½ tsp of salt
½ tsp of pepper
Cilantro
Recipe instructions:
Mix together all ingredients for guacamole and refrigerate. (Cover tightly with plastic wrap to avoid browning) In a large pan add in your chicken and sear for 1-2 minutes per side, remove chicken add in tomato paste + water and mix. Add chicken back and allow to simmer in the mixture for 15-20 minutes until tender. Mix together milk + velveeta in low heat until silky smooth. Fry tortilla chips and immediately salt. Freestyle the assembly with toppings and enjoy!
