I have let one in chapter 2, accidentally. The anomaly kills a patient and you'll have to dispose the body of the patient while the patient's ghost is chasing you, quite hard if you're doing it alone

What's the point of doctors, they don't do anything?

The point of the doctors are the guard the character you play as has to watch the doctors and you have to see if they are normal however if you let a suspicious staff in they basically kill a patient and the dead patient will spawn a ghost which you have to incinerate the dead patient to get rid of the ghost.
