Crunchy homemade granola
I love granola! Such a simple and yummy snack that can easily be made at home. I enjoy it on its own, or having it with yogurt or with warm milk like cereal. For this recipe I added almonds, pumpkin seeds and cranberries at the end, but you can add anything you prefer- chocolate chips and dried coconut are also great additions. Store bought granola is usually made with lots of sugars and fat and is way more expensive than homemade, and I’m sure you have all these ingredients in your pantry right now- so why not give this easy recipe a try 😊 Enjoy!
Ingredients:
3 ½ cups old fashioned oats
¼ cup oil (use a neutral oil like vegetable oil)
¼ cup honey or maple syrup
2 tsp vanilla
1-2 tbsp brown sugar
½ tsp cinnamon
¼ tsp salt
Nuts, dried fruit, seeds of your choice
Directions:
1. Preheat oven to 325 degrees Fahrenheit and line a sheet pan with parchment paper (I used a silicone baking mat).
2. In a small pot add the oil, honey, brown sugar, salt and cinnamon. Heat on medium heat on the stove until the sugar melts and the mixture turns golden and bubbly.
3. Add this mixture to a bowl with the oats and stir to combine.
4. Spread in a thin even layer on the sheet pan and bake for 10 minutes. Then remove from the oven and give the mixture a stir as this will help to ensure even cooking and browning. Spread the oats again on the pan and bake for another 15 minutes or until golden brown.
5. Remove from oven and place on a cooling rack. Ensure that the granola cools completely as this will ensure that the granola is nice and crunchy.
6. When cool, break the granola into bite sized clusters and add your choice of nut, seeds and dried fruit.
7. Store in an airtight container at room temperature or in the refrigerator.
