Hi it’s 118ml. The measuring cup I used in the video is a 1cup measuring cup. So I used 1/2 cup of hot coffee. Enjoy and thanks for watching!

What about substituting brown sugar instead of white sugar? Would it affect the texture?

I often do 1/2 cup white sugar and 1/2 cup brown sugar when baking this cake. If the brown sugar is not very brown in colour (like the kind you get in Trinidad) you can do all brown sugar - I have done this before and it’s fine. The cake will just have a slightly different color, but will still taste nice.

Hi! You can use less sugar if you want, but the 1/4 cup is not that much for 4 cups of flour. The hops will not turn out sweet at all- the amount of sugar will just contribute to the overall flavor of the dough. Hope it turns out well. Happy baking🙂

Hi Faith, it’s 1/2 cup equivalent to 1 stick or 4oz. of soft butter used in this recipe and in the video🙂

Hi! Thanks for watching. This cake is not very sweet but yes if you want to reduce the sugar to 150g that should be fine. I would not go less than 150g. Happy baking🙂

Hi you don’t need to use dates- you can use any mix of dried fruit that you have available. You can use more raisins and cranberries and omit the dates. You can also use currents/dried apricots/ candied cherries as well. If you are using less of the fruit mixture you will need to add some more liquid like orange juice or milk to the cake batter to ensure it stays moist. So if you want to use just 1/2 cup of the soaked fruit mixture, add 1/2 cup orange juice or milk to the batter. Hope this helps and let me know if you have any other questions 🙂

I just tried making this but for some reason the bottom half of the cake became thick and didn’t cook fully through. I followed the exact recipe, not sure where I went wrong 😢 it does however taste amazing!

Thanks so much for watching and glad you tried it. Sorry it didn’t turn out well- perhaps you needed to beat the egg and sugar mixture a bit more, or maybe the oven temp was a bit off. My oven is off by 50degrees so I usually keep a thermometer in there to make sure the temp is correct. Did a cake tester come out clean when you tested it? I also bake my cakes in the Centre rack of the oven. Maybe give it another try🙂
