Well the way the head moves has to be some kind of manual control. It's way too sporadic for face tracking or animations. Probably using a mouse or joystick. The expressions and movements are probably buttons on a board or macros from a keyboard.

I remember when me and my friends went to see this show at Disneyland. There is probably a dude sitting in a room with a facial recognition system that detects his head and mouth movements and sends it to the screen. And then he has controls to position Crush on the screen and play various animations. You can see that there are just a set amount of animations. The only thing that needs to be animated in real time is the head movements.
