Hi Ric, when I make bread, I always weigh the water, here is an example: 430 grams of bread flour 245 grams of water 20 grams olive oil 7 grams of yeast 10 grams of salt 6 grams sugar When it has mixed for 10 minutes, you do not need to put flour down, and the same as making your bread, this gives a very light and fluffy bread, you can also make rolls. My family and friends say it is the best bread they have tasted, especially with homemade butter. I love trying your recipes out on my family, they love everything I have cooked so far, keep it up, much appreciated, Les

This is a wonderful recipe, and you show how simple it is to make a loaf of bread. The rewards are immense, and with prices these days for a good product, making your own is a money-saving plan, as are all of your recipes. Here's to a wiser method of living, thanks to you and your introduction to home-style British cooking from across the pond. PS: the difference in how you use your fork and spoon and what is done in the States is so interesting. It's real, compared to what we are given in films and television. Keep up the good work, you make sense.

You have the exact same stand mixer as I. Just pull the dough to the side and let the first rise happen in the mixing bowl (less clean up") unless you're going to use it again. I think we can all agree that no matter what type it is, fresh homemade bread is hands down one of the best things you can make in your kitchen.... I have never heard of anyone who disagrees. Fresh warm bread and butter is one of the joys in life.

Okay, you did it again! You took all the confusing, complicated steps out of making bread. You just put all your flour in the bowl (not a cup at a time)... you don't worry about a firm dough... you don't do the stupid "window pane test". I had finally gotten a stand mixer about a yer ago... made "easy" rolls (NOT!)... came out heavy and too much flour. Never tried it again. But you... you just chuck it all in and go! I watched your Corned Beef Bierocks yesterday and was blown away by how you made that bread... then today you do this one! Just watched your hot cross buns using the instant yeast (which is what I have) and that one blew me away too. When I was in high school (centuries ago!) one day I made rolls, loaves, and braided cheese bread... all came out perfect. But...back then, we didn't have the internet to scare us. And we didn't have recipes telling us to use 3.5 to 5 cups of flour (huge difference... DUH!). I love you more and more each day!! ;) You are the King of making things simple!!! Thank you, Chef!! Shirley in NH
@BackyardChef
@BackyardChef 2 ай бұрын
Wow! Shirley, appreciated. There is nothing complicated on here - using an oven is easier. I mix flour - 1 cup bread - 2 cups all purpose/plain. Always for loaves. It is in the mixing - if you have that stand mixer get the dust off it and use it. 8-10 mins mixing, perfect bread. Saves on the arm and hand work. If you find the dough is too wet - just add a little flour a tbsp at a time. You got this, cant wait to hear about the first loaf. Thank you. Best, Rik

Haven’t baked a loaf for quite a while Rik, & your Farmhouse Bread looks absolutely delicious, a beautiful soft texture!😍 I just popped to the shops earlier when out to vote, & have bought my bread & rolls etc, but you’ve inspired me to try out your recipe, will have to oven bake as I only have a Casori drawer type airfryer, don’t have an AF oven. Think the last time I baked bread was around Dec or Jan, so will have to check the date on my yeast & replenish if required, you can’t beat the smell of baking bread wafting through the kitchen ☺️, but since losing my partner I just kinda lost interest in making the effort - will give myself a good talking to!😉😊 Thank you as always for sharing 🙏, hope you’re taking good care of yourself 🍍, & feeling a wee bit better, you still sound a wee bit breathless at times, so don’t be overdoing things my friend. Think you’ll enjoy it Jools, it really makes the bread so much lighter combining the two flours, learned that tip from my old granny over 50 years ago!😋 She was a farmer’s wife, worked on the farm, raised 6 children (as well as taking care of a feathered flock providing eggs for her brood) & still found time to bake two loaves of bread every day, Irish soda bread, a farmhouse loaf & a sweeter fruit version of the soda bread every couple of days. She’d be up at around 5am to help out with the milking, get back indoors, prepare & serve a full cooked breakfast by 8am, make her daily breads & have a big pot of Irish stew or the like, mashed potatoes & a mountain of vegetables cooked & served up for the family by lunchtime, all the veg & salad crops etc grown by her in their little farmyard garden. The crops in the fields were for selling, apart from a few sack loads of spuds she kept every few weeks. Tea time was usually a lighter meal or a salad, then the washing up duties & back out again for the evening milking session for another couple of hours. Before they finally got back in to have a pot of tea & whatever other cake & sweet treats had been cooked up earlier in the day, watch the news on the telly before saying family prayers & finally retiring exhausted to bed! She & my aunt also took care of the pigs & their massive litters of adorable piglets, bottle fed calves some who were twin births etc, fed the working dogs & the farm cats, whilst juggling house keeping, laundry duties, gardening etc, all without the modern day appliances we have nowadays. They had a big coal fired range in the kitchen for cooking, baking, heating the kitchen & hot water. Coal fire in the living room, no central heating or double glazing. They had no gas or electric supplies being out in the country, so had their own petrol driven generator in an outhouse in the garden, & I can still remember watching my aunt climbing out the kitchen window to power it up every evening, a shortcut to save her having to walk all the way around the house & into the back garden.😂 Clothes & bedding were hand washed in a big tub with a scrubbing board, although they did have the luxury of an electric spinner latterly. No vacuum either, they had a carpet sweeper and each week the carpets were rolled up, taken outside, hung over the washing line & whacked with tennis bats, till they were dust free. My Papa (grandfather) & uncles did the heavy work in the fields, planted, tended & harvested the crops. Did the heavy end of the milking & dairy work & associated cleaning & hosing down, sterilising the equipment etc. Delivering the livestock, going to market, maintaining the farmyard equipment & vehicles etc - they were always working, 7 days a week, 365 days a year. Sunday’s were a bit more relaxed, but the milking still had to be done & animals fed & looked after, but they never missed going to church every week, and managed to have a few hours off on a Sunday afternoon, usually either going for a leisurely walk or visiting neighbours & friends or just having a snooze after a big Sunday lunch. We really don’t know we’re born these days truthfully, I don’t know where they got their stamina 💪 - They had true grit!

What I have seen many chefs do is either put an ovenproof container with water or spray the inside of the oven with water to give the loaf a nice crusty outside. Is there a reason you omit this or is it just personal preference, Rik?

Yes, that works - not in the air fryer though too small and it blows all over. Thank you. Best, Rik

We have a Ninja Foodie air fryer thing, one big drawer that can be divided into 2. So we thought, "Brill, a bread recipe for the air fryer". What we found out was, air fry mode only goes down to 160c, but on bake mode we can crank it down to 140c. After 3 attempts on bake mode, it doesn't seem to fully cook and we get the most crispy crust. So we've concluded our Ninja is not the way forward on bake mode, then just tonight, we saw in the notes section the conventional oven option. So conventional oven tomorrow it'll be !!

@@BackyardChefThe gf and I have cracked it. We did it at 160c as you said, on bake setting for 25 mins. With it being an air fryer, we just assumed that was the setting. Half way through, took it out of the tin, then carried on baking it. I think the initial problem we had was, we didn't pay attention to the smacking out of the air and forming it up in the correct way to form a better shape for the tin. But it will come with practice and we think we're about 85% to 90% there. Thanks for the recipe, plus the cornflake tart is damn nice.

Hi Rik, loving your videos, great to some great recipes that are just perfect. Also love it at the end where you sit down to enjoy your efforts, fnatastic. I hope you don't mind me asking what make is your stand mixer and di you buy that in Thailand? I too live in Thailand and was going to buy a bread making machine, but looking at this video convinced me that I need a stand mixer to make the bread myself. Keep up with the videos you clearly love what you do. Cheers Steve.

Steve, I did indeed mate. Kitchen Aid they have a shop in Bangkok and you can search online through Lazada. A stand mixer is the way to go for a fantastic crumb. If not its a lot of kneading. Thank you. Best, Rik

Ingredient quantities indicate a 1kg (2lb Loaf/tin size. This is good because I know that my convential Cooker Top Oven is not tall enogh and the loaf singes on the Grill Element and I have been wondering if my Mini/Airfryer Oven (not Hyp.. but 30L) would be tall enough and you have shown it is, thanks. The other thing is could you not have placed the Bread tin on a Rack Type shelf which I have for mine? In my conventional cooker main oven the loaf turns out after baking and although the bottom is lighter, relative to the top it is not aneamic. I was surprised with your temperatures until I remembered they should be lower for an AirFryer type size. I love bread in general and homemade in particular so I do not have to turn my conventional Cooker back on. Thank You.

I make bread regularly and I find it rises and catches on the elements too, doesn’t seem worth using the big oven when I’ve got the little oven on top. Might try this recipe as it uses less flour 🤞🏻

I used to have a bread machine, I bought it in the UK, worked for a while then stopped, I had to scape it out of the machine and do it by hand, I have been making it by hand for over 20 years here in the Philippines. Philippine bread is just like American bread more like cake with a hand full of sugar in it. 🤢
