I think normal salt is the starter salt, bc it doesn't burn while cooking, then it's mixed with the fat from the meat as it cooks and renders, then you remove the meat from the heat source, let it rest, finishing salt, that it my guess. I dint know to be honest

Also, thank you Joel for building me a bedroom when i was 18 and trying to get out on my own and letting me come live with you and my sister while you were in law school and only charging me a 100 bucks a month in rent. My new trick for a fast and good grilled cheese, heat up a pan, throw in a little bit of butter, melt it, bread in, cheese on top, other slice of bread, cover, start the cheese melting, once cheese is sticking the bread together, flip, coat other side of bread with melted butter. Brown on both sides, enough so cheese starts weeping out the sides, drip extra cheese on pan, press sandwich into it, so it becomes toasted cheesy bread baby
