This amazingly simple salad gets a new twist with the fresh crunch of cucumber. Grab your garden fresh tomatoes, cucumbers, and basil and lets make this healthy and flavorful salad. Recipe below:
Cucumber Caprese:
1 cup sliced tomatoes
1 cup sliced cucumbers
1 cup sliced mozzarella cheese
1/4 cup chopped fresh basil leaves
a drizzle of extra virgin olive oil
a big drizzle of Balsamic vinegar
a dash of salt and pepper
Combine cucumbers, tomatoes, mozzarella, and basil in bowl. Toss together. Sprinkle with salt and pepper and drizzle with olive oil and balsamic vinegar. Enjoy!
