Welcome to the Iasipapa channel! Today, we have prepared a delicious recipe for penne pasta with creamy vegetable sauce, perfect for those who are fasting. 🌿
The ingredients you will need are:
500 grams of penne pasta
Salt
30 ml extra virgin olive oil
1 bay leaf
5 cloves of garlic
2 onions (one larger, one medium-sized)
1/2 teaspoon dried thyme
1/2 teaspoon oregano
1/2 teaspoon coriander seeds
1/2 teaspoon mustard seeds
1/2 teaspoon freshly ground pepper
2 medium-sized carrots
1 small parsley root
50 grams of celery (or celery root)
150 grams of tomato paste (or 2 coffee peppers or red bell peppers or finely chopped roasted peppers)
Plum jam (or 1 level tablespoon of sugar)
450 ml tomato juice (or 1 serious tablespoon of tomato paste or 4-5 larger seedless tomatoes)
250 ml pasta water
20 ml olive oil
Finely chopped fresh parsley
Roasted nuts (optional) 🌰
To prepare this delicious recipe, follow these simple steps:
1️⃣ Boil water in a 6-liter pot and add salt.
2️⃣ Add the pasta to the boiling water and let it cook for 10 minutes.
3️⃣ In a wide-mouthed pan, heat the olive oil and add the bay leaf to flavor the oil.
4️⃣ Chop the garlic and onion and add them to the pan. Season with salt, thyme, oregano, coriander, mustard seeds, and pepper.
5️⃣ Chop the carrots, parsley, and celery and add them to the pan.
6️⃣ Add the tomato paste and plum jam to the pan and mix.
7️⃣ Add the tomato juice and pasta water to the pan and let it simmer for 3 minutes.
8️⃣ Remove the bay leaf and blend everything in the pan until a smooth paste forms.
9️⃣ Add the drained pasta to the sauce and mix. Let it absorb the sauce for 3 minutes, adding pasta water if necessary.
🔟 Add olive oil and freshly chopped parsley and mix.
1️⃣1️⃣ Serve the pasta with roasted nuts on top for an extra crunch, if desired.
