Thank you Donna for teaching us. I've been making kombucha for about 10 years now. It took a bit to learn when it was ready to bottle and drink. I love it. Just a warning... my late husband and I used to sell pastured meats at farmer's markets. One market has a vendor that sells kombucha. The guy supposedly went out of country to learn the so called "traditional" way of making it. What got me was that he added carbonated water to make it fizzy. They sold a ton during the time we were there. It just boggled my mind since kombucha naturally fizzes without carbonated water.

The pellicle is the thick and slimy mat. Scoby is the liquid. ❤

Great video! I really want to try kombucha, but I am fearful that as someone predisposed to forming kidney stones, it may cause me to form kidney stones. I need to follow a low oxylate diet. I understand that the longer you steep tea the higher the oxylate level can climb. I also understand that that the fermentation process can greatly reduce oxylates. Have any studies been performed to gauge the average oxylate level in kombucha? Has anyone here that is a kidney stone former and who has monkeyed around with kombucha had a negative or positive experience as it relates to the formation of new kidney stones??

Thank you so much for all the information, in your book and on labels in the store l see kombucha is made from tea, which contains caffeine, which l don’t tolerate well. Would the amount in kombucha be low? Also try to avoid sugar for several issues. Is the sugar on the label the amount given to feed the yeast in kombucha, thereby not a problem or is it going to be what lm consuming. Susanne

I made a SCOBY from store bought Kombucha, I didn't notice it was flavored. The SCOBY looks healthy, should I not use it because it came from flavored Kombucha?

I am surprised that you were able to get a SCOBY to form from a store bought kombucha because most 'buch is pasteurized (kills the life force) if sold commercially. If the SCOBY grows and has grown, feed it tea and sugar and all should be fine.
