I’m not a wine drinker but I started making wine for a hobby and this mango wine was the first one I made. After it was done I gave it to my friends and family. I asked everybody to give me a 1/10 rating after they drank it and to my surprise it got an average 8 rating!😂😂😂👍👍 Thanks Japedo!

If you don't have an airlock, get a smaller bottle and stretch a balloon with tiny holes over the top. It'll let gasses out but no contaminants in

They said they could use the old pulp to yeast up the next batch, but at which point would you add the old pulp? And by old pulp I'm assuming they meant the old fruit at the bottom of the fermenter.

You need to collect the yeast on the bottom at the end of the fermentation. Next when you have all the ingredients in the fermenter you can add a tablespoon of yeast

it's reallllly dry and has a very slight sour taste (which might also be because i left the grape seeds and all a bit too long idk, it's not unpleasant) , tbh the mango taste is like very light, its super refreshing cold also its VERY VERY BOOZY i don't have that gadget to check the alcohol content but its really strong. i liked it 8/10 (i would add some spices next time i think cardamom would go well and a bit more sugar)
That definitely proves it. I shared s half glass each with friends and I can certainly see what you mean about moderation. We only drank a half of a glass and had to quit. It is definitely wine. Thanks again KayCee

I just started using raisins in my wine for added body and color. I'm very pleased with the results. This would be a great way to start making wine from fresh fruit. Putting in grapes for the yeast would make it extra special. Thank you!

That's why breweries rely on specifically chosen cultivars that produce the desired results on a consistent basis, while avoiding certain traits. Signore Cuore, I did it! I made mango wine based on your video. :) I made one batch with skins and one without. I tasted almost half of one batch because I got so excited. It was more sour than I expected, and also a bit bitter, but I sure got a kick out of it. It measured at 9.5% alcohol. I bottled it all and now after 5 days I tasted it again and it's so much better! I found a new hobby and wanted to thank you for it.

someone's probably made a comment like this, but you make it "sparkle" by adding a little sugar to it before bottling. the wine will remain carbonated after the yeast eat the sugar or you can pasteurize the bottles to kill the yeast to stop them from eating the sugar if you like your wine sweet.

Love your videos. Thank you! I have made the mango wine. It’s 2 weeks old today. Wine smells and tastes a bit like a fortified wine (like a port). The fermentation on the 100g primer is still happening but has slowed down. ABV is 1.9%. It doesn’t seem ready yet even though it’s been 2 weeks and smells like a port/liqueur. Any suggestions please?

It may be too cold. It should be between 65 and 73 degrees ferenheight (20-23C)for most wine yeasts or the natural yeasts from the grapes. Or it may have gotten too hot if it went above 80 ir 85 degrees for an extended period of time. Also, it could have been TOO high in sugars to start with. If the sugar content is too high is can stall or kill the yeasts. check your specific Gravity and if it's above say 1.150 try adding some distilled water. If it isn't above that it's likely not too much sugar. The yeasts should have all the nutrients it needs. But if you're not sure, you can try taking 1/2 a super B complex vitamin, crushing it to a powder (carefully. You can't to keep it sanitary. You don't want to be adding any bacteria in) and gently stiring that in. OR there didn't have enough oxygen to start with OR you need to gently swirl the container. The yeasts aren't very good at moving around so sometimes they can get surrounded by their own excretion and essentially suffocate ir drown or whatever. You'll want to go with the simplest first. So check the temperature and gently swirl, give 12-24 hours and see if it starts back up. If that doesn't work, check gravity and add nutrients (B vitamin) and stir. If that doesn't work... well it's likely you may have some bacteria killing your yeast fermentation and you'll have to dump it and try again.

@@Spectacular-cuoredicioccolato oh sure thing. I haven't done much intentional brewing or wine making. But have been researching it a LOT over the past few months. Something else that could stall or slow fermentation could be the PH. If I remember correctly, the Mangoes, especially being a little higher in protiens than the grapes, produce more amino acids when they start breaking down and fermenting, and if the PH of the solution becomes less than 4.2 or above 8.5 it could stall or kill the yeasts. I can't remember how I completely forgot about PH. But I was just doing some more research on how to achieve and help control the PH throughout fermentation. It seems that for wines, cidars, meads the starting PH should be between 3.2 and 4.0 for optimum fermentation. Litmus straps are cheap and can help if you take a reading at beginning of fermentation and at the start of secondary fermentation.

You rock!! It is more tempting for me looking at your recipe. I was for sometime wondering if I can do wine with mangoes, now it is very clear as I see it is possible 😆😁😀. I guess in comparison with your other wines, the alcohol % for Mongo Wine is lower, any reasons for it?

His mangoes were technically not fully ripe. Ripe fruit contains enzymes that break down the rest of the fruit into more sugar. Even though that's a thing, I think it's just because it has more water than his other wines

Are the yeast alive in the fruits even after all the chemicals sprayed on them ?? Or are you using organic fruits ?

Yeast is also in the air, and fruits are washed before sale. So, the amount of chemicals on the fruit is much lower than before it was harvested. So, it is quite easy to get a fermentation started, just like making a Sourdough starter.

As the fruits haven't been added to boiling water to sterilize, everything will be fermented from wild yeasts on the fruit/air. This isn't a very controlled way of fermentation, highly depends on environment. Which could introduce nasties into your homebrew.

Just had a question- I have already prepared Banana, Watermelon and Mango wine following your videos and they have turned out quite well. They have been aging in glass container for a month in my cellar :) Question is how can I increase the shelf life of these wines. I do not want these get bad (So much efforts have gone into :) ). Any tips/tricks please?

Just a couple of question: is there any possible use for the solid fruit material from the fermentation stage (the mango/lemon/grape solids left in the container)? Bhai, I will suggest you get a friut and cider yeast from (arishtam.com) they ship all over india. In other countries they have cold temperatures so any yeast will work without producing bad flavours. I am drinking my own homemade wine for the last 5 months, rarely buy commercial products. I will help you out dont worry.
