This is the video that started it all for me, and really got me to commit to start home-brewing. This channel also took me on a wild brewing, cheese-making, bread-making, charcuterie odyssey. I tried this and the red wine was the best I ever had in my life. Thank you very much. I tried to experiment with white grapes and I left it ferment for 9 days - I guess that's the mistake as I saw the fermentation stopped by day 5. By day 9 it already turned to vinegar. Oops.

Great video. You reminded me of my youth in Scotland. Our Italian neighbours from Provincia di Frosinone used to make wine this way every year. Around September or October, Silvio would select the grapes from the market. Him and my dad would bring back a couple of carloads full of crates of grapes and stack them in his garage. Us kids, would remove the grapes from the stalks, (amid grape fights,) put them into buckets, then empty them into his barrel press to extract the juice. After that, we would follow much the same process as in your clip. Eventually, after a year, our 2 families would share the rich rewards.....delicious and fruity home made red wine with no additives. As the priest once said, "fruit of the vine, work of human hands." You cannot get much better. Saluti dalla Scozia!

This is real wine. The stuff in supermarket is disgusting chemical swill. Most people hate "red wine" because they have never tasted real wine. 👍

Very nice and helpful for beginners to make their own wine, I am from greece and using my Island's traditional method I ferment 150 litters into an open barrel with a cloth over it for 40 days. But our method can't be used anywhere as it requires space, But yours my friend, I could even make it on an apartment. Thank you.

Bravisimo! Grazzie per la video! I am graduated for enology (wine making) at Agricultural University of Tirana. I have used the same methods for making wine on home conditions, for about 80 liters of wine in 2018. of course adding the required quantity of sulfites (SO2) to preserve it better, and then i kept until today. Thank you very much for this very clear and easy no BS tutorial. Very basic, so it is perfect for understanding what is wine making in its core essence. There are tons of tutorials on youtube and they are all different and complicated for a starter. I am using this tutorial for my first wine (I live in northern europe and the grapes are really late this year, beginning of october) at the moment and everthing is going as you told us. I will go from here and experiment with my next wines. I am very thankful as you really explained what wine making is all about!

I've managed to produce a very good one only with grape, apple, sugar and water, it was amazing, several days after, the mixture started to carbonate with no additional ingredient

Yeast is not used since good yeast moulds which are friendly to the body are present in the air, which was trapped before locking the container, In tropical and humid regions, many pathogens get locked inside, so yeast should be added as it protects from harmful pathogens multiplying In the brew - keeps it healthy,

Just like my great uncle told me how. Exception was no fancy bulb on top. He put the hose in water and told me wait until hulls sink. Can't wait to try your method. Looks easy and as foolproof as you can get.

We are currently following your tutorial to make wine from our own grapes. We stir the fermented grapes daily right now. After 9 days, we will start secondary fermentation. Would you explain why we need to change containers 2-3 times during the process?

There is space in your 2nd fermenter container, everyone says to avoid space in the second stage of fermentation. But I assume the airlock prevents additional oxygen? I went to buy more grapes, so I can get a higher yield juice for the second stage. Is it ok to add more grapes at day 5 in the first fermentation stage?

In Italy we keep the container open because we make 100 liters or more every time. But for 6 liters you can shake directly the container

Update 1: OK. I wanted to let you and others know the status of the wine until it's ready, maybe it raises or answers some questions. I hope @cuoredicioccolato correct me if I'm doing a wrong step. Phase 1: I started with around 4.5 kg of my grandpa's grapes, didn't wash them at all. removed the stems from grapes, smashed them with a glass and put them in an airtight 6L clean container that was washed with very hot water and dried completely. the grape juice color was white. I made an Airlock as @cuoredicioccolato showed in another video, and installed it on the cap of the container. I stirred the mix every day without opening the container. After about 2 days, the gas pressure inside the container started to rise and exit the airlock regularly. Phase 2: 16 days passed since Phase 1, the Gas generation started to decline. I opened the container, emptied the content through a strainer, and squished the remainings by hand into the strainer. The juice color was similar to this video. The smell was sweet with a nice aroma. I tasted the wine and it was a little bit sweet and warmed the throat a bit. I cleaned and dried the container again, put the juice back, sealed the container cap and installed airlock again. I'm now going to let it stay for another 16 days, without any movement.

Phase 3: after letting it sit for about a month, i filtered the wine using a filter, cleaned the container, put the wine back in and again let it sit for 3 weeks. Phase 4: three weeks passed, during the last week, airlock showed no movement. Gas generation has stopped. I fikteres the wine once more and put it into 2 1liter glass bottles. The color is very dark, like yours. I can clearly smell alcohol and some sweet aroma. Upon tasting it, there was no bitter ness, very faint sweetness and very little sourness. But it doesn't last. Unfortunately its my first time tasting wine, so I can't judge it. But upon drinking i feel some warming in my throat. What do you guys think!? How should it taste!?

ive done similar processes in SE Asia (35degrees +) and the process just happens a lot quicker. Its not the ideal for happy yeast but it works, just have to be a bit more careful and take more care in steralising things as not only fermentation works faster but also bacteria and mould.

same here.... all are writing healthy wine and yet they add a lot of refined sugar !!! I know this way from different tuber, but its the best, and you know what, the minimum days for wine to be ready is only 10-12 days, you can drink it and enjoy it! the more you keep it the tastier/better it will be. thanks,

Interresting. I harvested and crushed my blue and green grapes the past Sunday. Yesterday I added the yest to start my red and white whine. Many years ago I bought grapes from the Italian society in our town. I also received instruction for making whine in the same manor as you did here with the natural wild yeast. It turned out reasonably ok. I also watched your video about making cider. That looked interresting. I also have apples. Perhaps I should try that as well.😊

@@Spectacular-cuoredicioccolato Well if you insist. I gathered some apples from the garde + some wild apples. I schredded them with my mandoline and them put them in my whine press. I hardly managed to get any juice of of the apples with the press. I reduced the quantity of apples in the press but not with any significant improvement. I then used my steemer instead. By doing that I got the juice out. I had however planned to use the wild yeast in the apples but by using the steamer I must have killed that yeast. So I took a small ammount of my fermenting white wine and added it to the apple juice as a starter for the fermentation. It seems to have worked as the cider is now fermenting. The result remains to be seen.

If you buy grapes from the store that have seeds in them, you must take the seeds out as well as the stems. Both cause bitterness. This guy doesn't have to worry about seeds because these are grapes that are grown specially for wine.

Brings back memories of my youth (87) now, we didn't use a glass indicator then at home as the original method to determine continuing fermentation was a thin piece of wood with a flame inserted in the bung hole of the barrel after removing a large barrel cork which was wrapped in a cloth soaked in sulphur and water. Since the gas of fermentation is CO2, the flame would go out if there was still fermentation and would continue to burn if the fermentation process had stopped. The sulphur cloth was to insure that no other yeasts would enter and contaminate the barrel during fermentation. Nevr a bad batch, Salute!

Dear Sir, I like your wine making video (13.7). But one thing is not clear. You have not mentioned in the video what are the other ingredients you add to must of 4kg grape. I mean you have not mentioned the dry yeast.sugar .etc., please clarify my doubts.

You don't need sugar and you don't need yeast. The fermentation will start by itself 😉

if your grapes have been washed with sodium metabisulfide, it will not ferment and you will have to add yeast. unwashed grapes carry the bacteria with them.

cuoredicioccolato I think he meant that unwashed grapes carry the microbes with them that start the fermentation. Here in America we have to use yeast because all our stuff is washed before we get it
