Fragrant, cooked without oil, this cake will surprise you with its rich aftertaste, dense, heavy texture and not sugary taste at all! And, despite the fact that this cake is very simple to prepare, there is some kind of sophistication and blogging in it!
On a mold 30 × 11cm
Recipe:
500 g total weight of nuts and dried fruits of your choice (I have cranberries, raisins, dried apricots, figs, prunes, hazelnuts, walnuts, pistachios)
4 eggs
150 gr sugar (I have brown)
200 gr flour + 1 tbsp for dried fruits and nuts
10 g baking powder
10 g vanilla sugar
A pinch of salt
For glaze:
50 gr icing sugar
1 -1.5 tablespoons lemon juice
1. Cut dried fruits into small pieces, pre-dry the nuts in a frying pan and chop into medium pieces.
2. Add a tablespoon of flour to a bowl with chopped dried fruits and nuts and stir everything.
3. In another bowl, beat eggs with sugar, vanilla sugar, salt. It is not necessary to beat for a long time. Then add sifted flour with baking powder to a bowl of eggs and stir everything.
4. Pour dried fruits with nuts into the dough and stir until smooth.
5. Put the dough into a muffin dish lined with baking paper, level it in the shape and place in an oven preheated at 180 degrees, top-bottom mode for 50-60 minutes. Check the cupcake with a dry toothpick.
6. Remove the cake from the mold, after 10 minutes remove the baking paper and leave the cake until it cools completely. Decorate the cooled cake with icing. For the glaze, stir the icing sugar with lemon juice.
