The jelly adhering to the chocolate is the step that would scare me the most. I can't believe none of them fell off. The ideal of the jelly sticking to the ganache bit, just blows my mind. LOL

Okay. Where does one buy jelly cubes? The only types of jelly candies I've seen here in the US are the ones that have sugar on them. For the dipped chocolate. If I can't find the cocoa butter can I just use a few tsps of corn syrup? I've used it before with an actual ganache to fill cookies so that shine is still there once the ganache sets/dries. Just want to make sure it'll be okay. Seeing those jelly rounds stay put as you dipped then shook the excess off was satisfying but also made my heart skip a beat, lol. Nicely done Sally... 👍

Okay so I made these today and I encountered a few issues:- 1. I used 54% dark chocolate for the ganache, just as you did, along with orange-infused cream but when I whipped it, even though it was soft and whippy as in the video, it didn't pipe properly (even though I've never had issues piping blobs like in the video before!) So I ended up having to use a small palette knife to spread it out 2. My jelly discs just did not set into the ganache (even after 2.5 hours!) so in the end I had to spoon the melted chocolate on so it didn't end up looking as neat and the whole of the cupcake ended up covered rather than just the most part of the ganache 3. Even though I used 300g of 54% dark chocolate with a tablespoon of melted cacao butter, as per the video, my chocolate set pretty quickly (to the point that I had to mark with a fork before I could coat the sides) and it didn't stay shiny after it set I honestly don't understand how I could have followed the recipe and ended up with a slightly different result. I should add that it would be really helpful if you could give an indication of the rest/chill times (e.g. for the orange-infused cream, for the ganache and for the jelly discs) as omitting this makes it really difficult for us to plan ahead. It took me 5.5 hours in the end to make this with all the waiting times in between and I genuinely did not expect that to be the case having watched the video. On another note, I really did not enjoy the jelly on top 🙈 I appreciate that it would not be a Jaffa cupcake without the jelly but it's definitely a no from me. I'm glad I've given it a go but it's not one I'll be baking again!

You came so close to answering one of my questions - when recipes say 75g of double cream or whatever, are you actually weighing out 75g or are you using 75mL and assuming it weighs 1g/mL like water does? Sally, have you ever made 1 cup peanut butter, 1 cup sugar, 1 egg cookies? They're pretty tasty. Combine the ingredients & bake at 350°F-18°C until lightly browned.

That ganache sounds amazing. It would be good on so many things. Trying to imagine the texture of the jelly, is it like jelly (jello) or is it chewier like a jelly candy. Seems hard to eat, but definitely would like to give it a try.

@@3kylajsmith the block she dissolved in water is the same as powdered jello, which we'd normally dissolve in more water but for the recipe they need to be thicker so sally made them stronger. I tried one last night and they were still soft!

Hotel chocolate do a chocolate orange drinking chocolate for velvetizer… as it’s pure 60-70% chocolate flakes you add to milk to warm and make. I often use a couple of these to make a delicious chocolate orange ganache…nom nom

Well I know for a fact they will love these cupcakes! You can keep them in an airtight container at room temp, we don't recommend leaving cupcakes in the fridge as they tend to dry out quite quickly!

my cupcakes usually come away from the cupcakes while cooling no one ( up to now ) has been able to tell me why

haha could be a few reasons such as ..... the cases themselves - try using a different brand. If the cupcake is too oily this can cause the case to come away. Or if the bakes cupcake doesn't reach the top of the case once it has baked. Hopefully one or all of these will help you :) x
