You can actually replay the secret Devil boss. By holding the Zl and Zr buttons, (or just the shoulder buttons) the center grave will glow and you can play it again. This also applies for Mausoleums and Chef Saltbaker's cutscene the first time you fight him.

You can actually access the secret boss again, all you do is go to the middle grave stone, and it's either hold L1 R1 for 1 whole second or hold L2 and R2 for 1 whole second.

Bathaniel, You can replay the secret devil boss without replaying the entire game! You have to hold both Triggers on a controller or Backspace + Tab for a couple seconds in the middle of the graveyard where you first fought them in the DLC island!
