Curried Cow Foot with Beans:

Ingredients:
1 cow foot, cleaned and chopped into bite-sized pieces
1 tablespoon apple cider vinegar
1 teaspoon salt
2 tablespoons Jamaican pimento seeds
1 teaspoon paprika
1 teaspoon roast garlic herb seasoning
1 teaspoon all-purpose seasoning (e.g., Maggie seasoning)
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon ground cumin
2 tablespoons avocado oil
2 tablespoons curry powder
1 teaspoon turmeric powder
Water, as needed
1 can (13.5 oz) coconut milk
1 tablespoon ghee (clarified butter)
1 red bell pepper, diced
Fresh parsley, chopped
Fried plantains, sliced tomatoes, and rice and peas, for serving
Instructions:
Begin by blanching the cow foot. In a pot, combine the cow foot with enough water to cover it, along with the apple cider vinegar and salt. Bring to a boil and let it simmer for 5 minutes. Remove from heat, drain, and set aside to cool.
In a Ziploc bag or bowl, combine the blanched cow foot with the Jamaican pimento seeds, paprika, roast garlic herb seasoning, all-purpose seasoning, oyster sauce, soy sauce, and ground cumin. Mix well to coat the meat evenly. Refrigerate for 24 hours to marinate.
When ready to cook, heat avocado oil in a pressure cooker over medium heat. Add the curry powder and turmeric powder to the oil and toast for a few minutes until fragrant, being careful not to burn the spices.
Add the seasoned cow foot to the pressure cooker along with enough water to cover the meat. Add the fresh thyme sprigs. Seal the pressure cooker and cook for 1.5 hours or until the cow foot is tender.
Once the cow foot is cooked, add the coconut milk, ghee, beans, diced red bell pepper, and chopped parsley to the pressure cooker. Stir to combine and let it simmer uncovered until the sauce thickens to your desired consistency.
Serve the curried cow foot with beans hot, accompanied by fried plantains, sliced tomatoes, and rice and peas.
