Hi MIss Debbie, I am born Jamaican but I left Jamaica for Canada when I was 14yrs old and to be honest with you I never knew that you could use chicken back to make curry chicken back at all as I never ever saw my grandmother or mum made it. They only use it to make soup and for me I was only using the chicken thighs and legs to make curry chicken all the time. So today I finally learn something new from watching your show. I'm not Jamaican, (my people Trini and African-American), but I cook curry chicken back, chicken feet and neck all the time. Most grocery stores sell it in the States. You can cut it yourself from the whole chicken or have the butcher at the market do it, too. As usual Ms. Debbie big up yaself! Another favorite!

Yes Ms. Debbie. I can get chicken back here in Denver, Colorado in the Whole Foods Market. I am never out of chicken back, I always have a package or 2 in my refrigerator. I am always amazed at how we Jamaicans can take what would otherwise be a worthless piece of meat and make something tasty out of it. Wi nuh easy. Nuff Love

The same thing happens all over the Caribbean not only Jamaica. I think that some forget that we all have a similar history. I lived in Montserrat for 17 yrs and we used to get chicken back in 5 lb boxes, Franklyn Greaves used to do a licking chicken back and Johnny cake. I am back in Barbados and chicken back is always available. KFC here has an outlet that has the back and breast bone attached, they are called cages. When KFC take off the breast and they don't use the back so they sell it like that. I visited Trinidad many times and chicken back is there too, so it's all over the Caribbean.

Howcome sometimes the scotchbonnet can be chopped and sometimes Jamaicans only boil it in the food for flavor without letting it burst? Does it depend on how mature the pepper is? Maybe that would be a good video idea, to learn more about the interesting way that Jamaicans traditionally cook with the peppers...

Love chicken back my favorite i was looking at some in the store today but dem look like the one them from back in the day i always cut mine from the whole chicken and save them for my soup, curry or stew I always make two dumplings especially in peas soup but white one with the chicken back love it with white rice too pick yuh choice the whola dem nice I have every type meat in the freezer take all except my chicken back and yes I love that part definitely leave it on and the tree full a scotchie right now and yes mi know bout the fat fi hile
