Chris, My late Grandmother loved to watch your channel and I had to mention you in her final service last month for giving us a memory I will forever cherish. Gram used to tell me "Put on Caribbean Pot, lemmeh see meh friend, Chris what yuh cookin today boy." It is my regret that we didn't make a time to meet you before she got sick with ALS, as we are here in Toronto, but I appreciate you and wish you many blessings. I grew up trini American in Brooklyn and I thought I would never get that authentic trini taste after my died passed away with all his delicious recipes I used to enjoy when I was a child. Thanks to you I have found a little taste of heaven and I don’t have to drive 2 hours to Brooklyn anymore 💙💙💙💙

I just made this again for the fifth time. As an experiment I used a can of organic white kidney beans. I much prefer the kidney beans and encourage everyone to try this. (As usual I used my Jamaican Jerk seasoning that I love.) CMJ Canada

For a better taste, you could replace the added water ( min 6:42) with coconut milk. (well shaked before)

I'd have to disagree. while the coconut milk will add a bit of creaminess and sweetness, in this case it will take away from the robust curry flavor. just MHO though

Hey Chris...love this video! I shall certainly try it. Just a quick note to say that 'culantro' or 'shadow beni' is NOT the same as 'cilantro' or 'coriander'. I have never used culantro before...but I am very sure that it is NOT the same as cilantro.

taste profiles are similar but culantro's flavor is cilantro on steroids. That is why cooks say to sub one for the other.

I think you misunderstood. I said Shado beni or Culantro - or (if you don't have that) use Cilantro - very same flavor profile, but cilantro is a bit milder. (I grow both)

Just use canned chick peas. Follow the burning of the curry, add the canned chick peas and the potato. Then, cook until the potatoes are done.

I use canned beans all the time. Can't even find the dried ones most times. I just rinse them well and adjust the cooking time, as it is a bit less.

It will be available on amazon but you should be able to make as well. The ingredients are pretty common and easy to get ahold of. *hint* using whole spices that you roast grind and blend makes a much richer flavour curry then buying the spices preground
