Ingredients to make paste
2 inch ginger
8 shallots
10 cloves garlic
some coriander with root (wash thoroughly)
8-10 dried chilies (spiciness suitable for 12yrs kids and above, you may reduce)
2 candlenuts or can use 5 cashew nuts too
2 lemongrass, only the white part
1/4 cup vegetarian fried anchovies
1 tsp galangal
other ingredients
1/2 cup oil
1-2 cups of water
1 tbsp of curry powder
1/2 tbsp coriander powder
1 sprig curry leaves
1/2 tbsp chili powder
3 screw pines
2-3 cups of fresh coconut milk, can use pack one too)
salt as per taste
2-3 cups of water ( pls adjust curry thickness as some people like thick or watery)
dried tofu as many as you like
vegetarian balls or other vegetarian tofu
2 tsp white pepper powder
2 tbsp lime juice
cook your preferred noodles, e.g yellow noodles, kueh teow, mee hoon, yee mee
Garnishing ideas
1 sprig curry leaves
fried vege anchovies
Fried fuchuk or bean curd skin
fried wan tan skin
mint leaves
