What about manual spot elevation marks? where i type the value myself without changing the whole model?

You can create detail family but it will not be connected to spot elevation .. you just add text manually to it

How can I make a spot elevation that shows structural floor level below and finished floor level above?

When you select spot elevation, in the bar that show up there is a drop down list were you can select to show top and bottom elevation of a slap,, if the bottom is the top of structure slap it will work fine but you can add text because this is a system family 😢
