Hiromoto Aogami Super 210mm Gyuto. It's hard to find their knife now since they no longer make it. That's one of my favorite knife.

I am using Hiromoto AS Gyuto 210mm which is no longer manufacture so it will be hard to find. They require a little more work to maintain. Another knife that I use on a daily basis that is almost as good and easy to maintain is the Misono UX10 Santoku 7.0" ( amzn.to/2jjBQyw )

That's not how a pro cuts pineapple, very wasteful. Cut your pineapple the way the Thai's cut them, much less waste and more decorative.
