Chocolate mousse by pastry chef Cyril lignac, a light mousse with a good taste of chocolate.
Ingredient:
For 3 verrines of 10cl:
80g dark chocolate
40g 30% liquid cream
10g of milk
50g egg whites
1 pinch of fleur de sel salt
The whipped cream:
50g mascarpone
1 teaspoon powdered sugar (to taste)
10cl of liquid cream 30%
1 vanilla pod
