Homemade Taiwanese Beef Ribs Soup Recipe
自家秘方清燉牛肉湯
Ingredients 食材
• Beef ribs 牛肋排1200~1500g(牛腩或牛腱肉也可,不過就需要放一點牛骨頭在裡面熬,因為我選用的部位是骨頭跟肉都有所以我熬出來的味道就很足夠)
• Onion 洋蔥 1 個
• Leek 大蔥 1根
• Shallots 紅蔥頭(小乾蔥) 2個
• Garlic蒜瓣 7瓣
• Radish 白蘿蔔 ¼個
• Carrot 紅蘿蔔 1 根
• Celery 西洋芹 2根
• Ginger薑 1塊
• Bay leave 月桂葉 3~4片
• Star anise 八角 2個
• Black pepper 黑胡椒粒 1tsp
• Pepper corn花椒粒 2 tsp
• White pepper 白胡椒粒1tsp
• Dried chili 乾辣椒 4個
• Water 過濾水 3000ml
• Salt 鹽 1 Tbsp
Seasoning湯料調味
(牛肉塊都燉透以後,湯料都過篩了,就可以使用以下的配料進行調味,稍微加熱5 分鐘均勻攪拌即可,可以自行調整偏好用量)
• Soy sauce or fish sauce醬油 2~3 Tbsp (可改成魚露,或是各放一半)
• Rock sugar 冰糖 10~20g
• Cooking wine or Japanese sake料理米酒 30ml
