DAL PAKWAN(Sindhi dish) RECIPE
DAL- INGREDIENTS
1.Bengalgram dal(Chana dal) ½ cup
2.Salt to taste
3.Turmeric powder ¼ tsp + ¼ tsp
4.Ghee 1 - 2 tsp
5.Red chilli powder ½ tsp
6.Coriander powder ½ tsp
7.Red chilli (opt) 1 - 2
8.Ginger(chopped) ½ “ piece
9.Garlic “ 5 - 8 cloves
10.Green chilli 2 - 3
11.Big onion (opt) ½ of 1
12.Tomatoe chopped 1 + 1
13.Corriander leaves 1 tbsp
14.Lemon juice 1 tsp
PAKWAN INGREDIENTS
1.Maida 1 ½ cup
2.Atta ½ cup
3.Besan ½ cup
4.Rava ¼ cup
5.Oil 4 tbsp
6.Ajwain ¼ tsp
7.Cumin (roasted crushed) ½ tsp
8.Black salt ¼ tsp
9.Salt to taste
10.Oil for frying enough
MEEDHA CHUTNEY(Supportive)
1.Tamarind soaked lemon size
2.Dry ginger powder ½ tsp
3.Kismis 5 - 8
4.Cashew nut 4 - 5
5.Dates julienned (opt) 3 - 4
6.Jaggery 2 tbsp
7.Black salt ¼ tsp
8.Roasted jeera powder ½ tsp
9.Red chilli powder ½ tsp
10.Pepper powder ½ tsp
11.Cloves 4 - 5
12.Cinnamon 2 pieces
Boil all together till syrupy, and use when cooled .
GREEN CHUTNEY
1.Mint leaves 1 cup pressed
2.Tomatoe 1
3.Garlic 5 -6
4.Ginger ½ “ piece
5.Green chilli 2
6.Lemon juice ½ a lemon
7.Salt to taste
8.Black salt 2 - 3 pinch
Grind all together.
