As a suggestion, you could get the Litematica Printer mod on Modrinth. It will allow you to place the blocks without having to look at each one. That way you can just run along the schematic. Should speed up building a little bit for you. Very enjoyable video and I appreciate that you link where you get the farms from!

Have you tried moving villagers with leads and boats? Running with the leads and the boat can pull the boat up and down blocks. You can also use elytra to pull the boat, just make sure you don’t fly too fast or the lead break

Stone becomes cracked when it's cooked in a furnace because in real life, stones can crack (and explode) when heated, especially if they are river stones. The water inside them boils and has nowhere to go, and so the stone cracks or explodes, depending on how much water was in it. So never use river stones for a fire pit.
