No tengo problemas para leer, pero entender el español hablado puede ser un poco difícil porque no tengo práctica.

Why is she using “me” instead of “yo” when she refers to herself doing an action?

The ‘yo’ should be before the ‘me’, but we don’t say it: (Yo) me levanto. We use ‘me’ with some verbs. Those verbs describe actions that you do to yourself. For example: LEVANTAR(SE) (to wake up). You could wake up your child; ‘(Yo) levanto a mi hijo’ or you can just wake up yourself: ‘(Yo) me levanto’. ‘Me’ could be translated as ‘myself’ 😊 I hope this explanation helps!
