I think Maze calling Ella Ellen is a nod to the comic this show is based on. Ellen sounds a little bit like Elaine , in the comic Elaine Bellock is a young girl with special powers who encounters Lucifer and takes part in the adventures and battles surrounding him. She is a very special woman/girl.
