The issue is that I don't trust the material quality and especially heat treat of anything made in China. They can make great stuff for sure, but often the quality control is lacking and they cheat and cost cut if they can.

@@thorwaldjohanson2526hey boomer they are talking about Japanese knives, the craftsmanship of which are notorious. These are artisans that have honed their craft through a lifetime, often multiple generations. If you can’t spot a no name piece of Chinese crap vs a high quality hand made work of art of a knife that’s a you problem.

@@cameron126651 they are mass produced in China. They definitely seem like some of the better ones and not a complete scam like kamikoto or huusk, but they are Chinese knives.

No Aus10 but your right it’s not a powdered metallurgy steel.

AUS10v is an entry level Japanese steel. Similar to 440c. Definitely not a super steel.
